Comfort Food on a Thursday Night

It's still dull and it's still January, so you might as well have some comfort food. This is one of my favourite home made soups. It ends up being wonderfully creamy and flavourful, but it is full of wonderful vegetables and absolutely no heavy cream. It is time for potato leek soup!



Here is everything you need to make this soup: potatoes, leeks, onion, celery, carrot, a little butter, chicken stock, a little milk, salt and pepper (also some parsley if you have it).



Melt your butter and start chopping. All the vegetables go in to be stirred around with the butter, then over low heat, let the veggies cook a bit in a covered pot.



Add a whole container of chicken broth.


Pour in a little milk, not even half a cup. I always use 1% milk for everything.



After the veggies are nice and soft, season with salt, pepper and parsley. It is time to make this creamy. But first, we need to have a moment of silence. I lost an old friend today:


My good old Braun hand blender has been with me longer than one of my own children. It has blended many pots of soup over the years. In fact, I took this picture and was then going to take a picture of me blending the soup right in the pot, but the poor old thing just gave a dull buzz and ceased to whir. So, I was forced to use my blender to puree the soup, a few ladles at a time. It worked fine, but being able to use the hand blender in the pot is so convenient. You don't have a blender, or a food processor to wash up afterwards.



All nicely blended but still a few little chunks so you don't feel like you're on a liquid diet.


Here's the final result with a nice warm slice of cheesy garlic bread. There are lots of leftovers for later in the week. Good comfort food at this "lovely" time of year!

  5. Love leek and potato soup. Don't usually add the milk but will next time. My hand blender gave up the ghost last time I used it but I have an electrician in the family and it was resuscitated. Purees !such smoother than a blender.
    And garlic bread...YES

  6. Oh yum. I do almost the same recipe, I just switch the chicken broth for veggie broth & Bob's your uncle!. I know what we are having for dinner tonight - off to shop to get those nice crusty rolls from Costco.

  8. I love a good homemade soup. And this one looks delicious! I make huge pots and store for other meals. That comes in handy when you need a quick fix supper.

  9. Excellent post! I've been looking for a very simple recipe for a couple of days! I'm going to put my leeks and other veg. to simmer on the wood stove in a few minutes.
    I love your china. I've been trying to collect pieces of Blue Willow for some time. I had service for 8, or was it 12?, but when we had that "big" earthquake five or so years back, a shelf in my cabinet collapsed and most of it fell and broke. :(

    1. Funny you should mention the dishes. I'm so tired of them. We actually collected them years ago through a special promotion at our local grocery store. Now I would like something quite plain, maybe just a raised pattern in the dish, but only one colour, creamy white perhaps.

  12. Sounds delish! I haven`t ventured further than cauliflower soup and, once, cream of celery. But I do make rather a good carrot and lentil soup that doesn`t get blended. The secret too it is lots of turmeric and curry powder.

    1. Now you are making me think of a cauliflower and wild rice soup that I've made a few times. Soooo good. I rarely make soup out of a can (although I'll use mushroom soup in other recipes), but I just love homemade soup.

  14. This looks awfully good. They say that it's supposed to start snowing here later this week and I'm thinking a good soup recipe might be just the thing. I even have most of the ingredients! Yay!
