The Best Thing About June is... Strawberry, Rhubarb Custard Pie!

For Father's Day, my husband requested a strawberry, rhubarb custard pie. It is one of my favourites to make and since I have a HUGE rhubarb plant and more strawberries than I know what to do with, I was more than happy to oblige.

This time around, with being so busy, I cheated and used a frozen pie crust. Yes, I can make my own, but seriously, when it's this kind of pie, it's the filling that is the star of the show, not the crust.

I have made this recipe a number of times. I have no idea where I got it from. Likely somewhere on the internet. I'd love to give credit for whoever came up with this recipe, but its origins are unknown. Likely anybody who is a baker has made a similar pie, but just in case you are looking for yet another recipe, here it is: (sorry I have no idea how to do one of those recipe posts where you click to get a printable version)

Strawberry / Rhubarb Custard Pie

Preheat to 350 degrees.

Ingredients:  Filling- 1 1/4 cups sugar
                                  1/4 teaspoon salt
                                   3 tablespoons flour
                                   2 eggs, beaten
                                   1/2 cup milk
                                   4 cups rhubarb, chopped
                                    aprx 2 cups strawberries, halved or cut up if big in size

                Topping- 1/2 cup sugar
                                 1/2 cup flour
                                 1/2 cup butter or margarine
                                 pinch of salt

Stir dry ingredients of filling together in a large bowl.
Stir into that, beaten eggs, then milk, then fruit
Pour into unbaked pie shell
Mix together topping ingredients and spread on top of pie
Bake one hour at 350 degrees.

It only took two long ribs of rhubarb for this pie. You can see my "cheater" frozen pie crust!


It even looks pretty just stirred together in the bowl! I love the colour combination of red and green in rhubarb.


This pie barely put a dent into my strawberries. Two of these containers are just from today and I have another bowl in the fridge. (I also have plans for jam).




This recipe is always too much for a standard 9 " pie crust, so I pour the extra into these cute little baking dishes. The topping is more like sugar cookie dough smeared on the top, than a crumb topping.




Here is the finished product. I baked it on a cookie sheet, which is a good thing since it boiled over a bit. I put it on the cookie sheet because it was just a tin foil pie pan which didn't feel sturdy enough.

  4. Oh, my! That does look good! I think I've made a rhubarb custard pie once or twice, but prefer straight rhubarb myself. Never have combined rhubarb and strawberries, but I know my husband would LOVE that. We're both rhubarb lovers but his favorite fruit is the strawberry. I may just have to try your recipe when our strawberries are ripe . . . which should be the first part of July. (How come yours are ready before ours? We should be south of you, right?)

    Folks in the southern states in the U.S. can't grow rhubarb because it needs the cold winter for its dormancy. Guess that's why it's our first "fruit" of the season here in Minnesota!

    1. I gave myself a little geography lesson and looked at a map of North America. Ontario is a pretty big province, but I am tucked in amongst the Great Lakes. You could probably draw a horizontal line (latitude) from where I live in Ontario,and it would line up with the southernmost part of your state. I am not sure where in the state of Minnesota you live, but I think I am significantly farther south than you are. Strawberries are always close to the end of June for us.
      That makes perfect sense, about rhubarb needing its dormancy in the winter. It is the one plant I can always count on!! -Jenn

  5. That looks good! The top crust is interesting. Do you grow your own berries? I have to go picking later this week when it cools down so I can make my jam.

    1. Hi Little Red, yes I do grow my own berries, and this has been the best year so far, so I lots with which to make jam, or freeze, just need the time to keep picking! -Jenn

    Do you have a problem with pests eating them?
    I make freezer jam...sooooo easy....soooo delicious! You should try it!

  7. Ohhh those do look delicious!!!!

    And I wish I could get away with "don't worry about the crust because the filling is the star" idea, around here. -giggggles- Here, the home made crust is as much 'the star' as the filling is. ,-)

    My 15 year old grandson, told his GF not to bake him a pie. Because he only likes pies, made by his Nana. She can bake him other things, but not a pie. ,-)

I have never tried rhubarb ......I don't think it is even available in our grocery store..........but I have always heard about pies like the one you have posted. Thank you for sharing the recipe. How wonderful to have such a great harvest of strawberries.

    I made a rhubarb cake yesterday . . .
    It was a "giveaway" for a friend who had surgery . . .
    My hubs watched it go out the door . . .

  12. I have never seen anything that looks so delicious. I've made rhubarb n bramble crumble, rhubarb and strawberry jam but never this....it looks AMAZING!
